Mini Pão de Queijo (brazilian cheese buns)

  • 1/4 cup water
  • 1/4 cup milk
  • 1/4 cup butter
  • 1/4 cup oil
  • 1 tsp salt
  • 2 cups tapioca flour
  • 2 medium eggs (beaten)
  • 1 cup grated Parmesan cheese (I used cheddar slices in this recipe, but yields good results too!)
1) Heat water, milk, oil, butter and salt in medium pan till boil and remove from stove.
 
2) Sieve & stir in tapioca flour quickly. Mix till bread dough-like texture. (Add a bit more flour if too runny)
Let dough cool just warm (approx 10 mins)
 
3) Add beaten eggs bit by bit while stirring.
 
4) Add cheese, mix till smooth. (Consistency will be of mashed-potato) Chill dough for few hours.
 
5) Roll into balls onto baking sheet on tray. (You may sprinkle some coarse sugar/powdered sugar on top)
Preheat 190°C (375°F), bake for 12mins-15mins.
